1. Steamed Lobster
Ingredients: lobster, soy sauce, salt, onion, ginger and garlic

(1) The live lobster you bought should be cleaned with a brush first. The next important step is to urinate the lobster. There is a small hole in the tail of the lobster. Insert the chopsticks into the hole and pull out the chopsticks in about 5 seconds. Then the lobster will urinate. In this process, you should grasp the lobster to prevent the lobster from running away because of pain. After urinating, the lobster will not have the smell of urine after cooking. Next, cut the head of the lobster with a knife, take out the meat in the head, and discard the dirt in the head. Next, put the belly of the lobster upward, and cut a knife from the middle until it reaches the hard shell. Take out the shrimp line and throw it away, and then cut the body into sections.
(2) Put the meat of the shrimp head back into the cleaned shrimp head, and then put the shrimp head and the shrimp body on the plate together. Add ginger, onion, garlic leaves, sprinkle a little salt, pour a little soy sauce, and put them into the steamer. When cooked, sprinkle chopped green onion on the plate and serve.
If you think the steamed lobster is light, you can steam the lobster with garlic. The previous steps are the same, that is, when adding spices, you should choose garlic, and garlic should be fried in the oil pan in advance. When frying garlic, remember to put a little salt, and then evenly spread it on the lobster and put it in the steam pan.

2. Crispy Lobster
Ingredients: lobster, soy sauce, rice wine, ginger, eggs, salt, starch
Practice:
(1) The process of cleaning lobster is the same as the first step of steaming crawfish.
(2) If it is a live lobster, you can ignore this step. If it is a dead lobster, you need to marinate it. Add some rice wine and soy sauce to marinate the lobster meat. The meat of the lobster head has been taken out. After marinating for a period of time, you can put it back into the lobster head, and then pour in some rice wine and soy sauce to marinate the shrimp head and the shrimp head together. The lobster body is pickled together with its shell. After about ten minutes, it will be turned over and pickled for about one hour.
(3) Beat the eggs, add a little salt and starch, and stir well.
(4) When the oil pan is seven minutes hot, turn the heat down. Wrap the lobster meat in egg paste and fry it in the oil pan. In the process of frying, turn the lobster over and fry it for about 3 minutes.

3. Stir fried Lobster with Cheese and Scallion
